Default Reading EGT

I've always wondered what to look for when reading Exhaust Gas Temperature? What are you looking for? How does the data aid in tuning? Is it also an aid to look for signs of a problem?

I know it provides useful data, but I have no idea how to to interpret it. I'm curious because mostly every aftermarket turbo elbow I've looked at has a bung for an EGT gauge and I want to make use of it.
