The biggest difference in the 1JZ and the 2JZ are pretty much a half liter and a little less horsepower to start. The 1JZ is a twin turbo 2.5 liter inline 6 and the 2JZ is a 3.0 liter twin turbo inline 6. There is a ton of sites on the web just look up 40k JDM motors or go to rims and things and I am sure there are a few others that are good that other guys here will suggest. The 7MGTE would be easier on you unless you got a unlimited budget then go for broke and do the 2JZ swap. I am not saying the 2JZ is a easy swap to do but it can be done just a lot of modifications you got to make like number one you have to swap it to a single turbo or pound out the firewall. The 1JZ is easier to find and cheaper and most every part from the 2JZ will fit it. It starts at 280 hp and I have one beleive me it is fast I smoked a 07 mustang GT 5spd the other day and had like three car lengths on him. Like I ws saying though the 1JZ is cheaper like a clip costs about 2600 dollars and a 2JZ clips runs like over 5 grand. You can get a 7MGTE for like 900 dollars with 40k miles on it. The other question you had about a V-8 it can be done but dont bastardize your car like that you can get way more power out of a 7M or a 1JZ than you could ever get there. Go to youtube and look up KWNATE he is pushing almost 850 out of 7MGTE that aint bad.
