6 pucks are usually plenty streetable.... but yes, 6 puck or less have more and more chatter. A OEM style disc with a very high clamping force pressure plate can cause chatter.
Chatter can happen whether the disc is sprung or unsprung. With a sprung OEM disc if a couple of the springs or rubber bushings (as were the case in mine) break up you may also experience a lot of chatter.
The bitch of it is that the only way you're ever going to know is by pulling it.
