i have a mk3 turbo and every time i have to turn on my car it starts but it sounds like a subaru and it starts to throw white smoke and it smells like anifreeze then it just goes away whats wrong with it

my engine is starting but i have to kee on the gas so it wont just shut down. but after like 10 seconds it idles up and down then just shuts down. idk if it can be the knock sensor.

I'm losing power steering fluild from the pump but not leaking on the ground no leaks on any hoses and it smokes badly when I fill up the power steering pump why is this??????
