I've searched and can't find anything 100%. Anyway does the stock shift knob just twist off or is there a trick.

My Mk3's knob just twisted right off. I have an aftermarket one twisted on now.

there is a special trick, you have to stick you tounge out as you twist it off.....
nah just kidding. it does take a bit of kung fu grip to get it to twist off, normally both hands are required to get it started
