couple ?'s
Bought an mkIII and am replacing the head gasket, have everything disconnected I think to pull head off, its not budging, only thing I haven't taken off is the 4 huge allen key bolts in middle, would those prevent it from coming off? If so what size are they? This is the only thing I can think of that's not letting me pull it off, I don't want to put a screwdriver to aluminum head but its lookin like that might have to be an option as well

No the spark plug galley cover does not hold the head on the block. Triple check that u have all the head bolts removed. How many have you removed?
I have had to use a pry bar before but it broke free pretty easily. I bet there is still a few bolts holding it down. Some are kinda hidden!
