Leave well enough Alone
Not to be Too rude, but its obvious you don't understand the principles of the Computerized Automotive System.
So......I will tell you like I tell others with that same lack of knowledge..... "If you don't know what you're doing, Don't mess with it !! Cause you'll end up paying $$$$ heavily for it". The parts are on the car for a reason. Every part serves a purpose. In the case of the AFM (Air Flow METER) it measures the amount air coming into the engine. It does this using that little spring loaded door. Google the net for some info on how this type of system works. There are millions of cars using it (Toyota, Nissan, Ford, etc).

You can remove the AFM if you use a 'stand alone' air/ fuel management system.

That's an interesting question. I don't know if it will work upside down. Thinking about it, and having had a couple completely apart, I'd say it will work.
